Curry Chicken Soup
Kim served this to us the first time we arrived in Berlin.
ingredients
- raw chicken
- peanut oil
- curry powder
- butter
- clove of garlic
- flour (enough to coat the chicken)
- whatever veggies you like (zucchini, mushrooms, peas, potatoes, peppers)
- chicken broth
- coconut milk
- lime juice
- curry
- chives

There are no measurements listed ... Kim’s a very artistic cook ... add till it looks and tastes right : )

Put peanut oil in a pot and heat.

Cut up raw chicken and add to hot oil. Saute with curry powder, butter, a clove of garlic, and flour (enough to coat the thicken). Put the flour and garlic in at the end so as to not burn the garlic. You’re not cooking the chicken all the way ... just coating and browning it a bit.

Add veggies:

zucchini, mushrooms, peas, potatoes, peppers ... whatever you like

Add 1/2 chicken broth and 1/2 coconut milk until have as much liquid as want

Add lime juice

Simmer - taste - add whatever it needs such as salt, curry, etc. Should be a nice orange color.

Chop chives thin and sprinkle on top.
