Sausage and Spinach Penne
Substitute Turkey sausage for Pork sausage and whole wheat penne for white and you’ve got a terrific healthy meal. I add more spinach to this dish- 3-4 cups.
ingredients
- 1 onion, chopped
- 2 cloves garlic, chopped
- olive oil
- 1 pound Hot Italian turkey sausage, pork sausage is fine if you prefer it (we often use a garlic spinach chicken sausage, grilled and sliced)
- 4 cups spinach, fresh
- 1 12 oz can Italian seasoned diced tomatoes
- 1 pound Penne Pasta
- 1/2 cup white wine
- Fresh parmesan cheese

Brown the sausage with the garlic, onion, and olive oil in a large skillet or saute pan (you can also use link sausage and pre-grill and then slice it and add it to the pan). Once brown (almost cooked through) add the tomatoes and wine and simmer for 20 minutes or until the liquid thickens slightly.

The sausage should be completely cooked through by the time this step is finished. While simmering the tomatoes cook the pasta al dente or slightly firmer. Drain and add the cooked pasta and the spinach to the pan. Toss well and cook until the spinach wilts. Generously garnish with parmesan and serve.

Mushroooms are also great in this recipe. You can omit the tomatoes and add asparagus as well, or use asparagus, spinach and bacon and make an entirely new dish.
