Old Fashioned Baked Custard
ingredients
- 4 cups Scalded milk and/or cream (whatever ratio
- preferred from skim milk to half and half)
- 1/3 cup Sugar or honey
- 1 tsp Vanilla extract
- 1 tsp Almond extract (optional)
- 1/4 tsp Salt
- 5 Eggs
- 1 dash Cinnamon (optional)
- 1/4 tsp Nutmeg, for topping

Beat eggs in a mixing bowl.

Add vanilla and almond extract, salt, sugar/honey, and (if desired)

cinnamon.

Slowly pour partly cooled milk/cream into beaten eggs, and blend.

To scald milk: Place milk in a heavy-bottomed pan on low heat. Stir occasionally until milk is just hot with steam and small bubbles appear around the edges; do not boil. Remove from the heat.

Place mixture in 1-1/2 quart baking dish. Set dish in pan of hot water and bake in oven at 325F. degrees for approximately 1 hour, or until silver knife inserted into center comes out clean. As an option, use buttered ramekins for single servings.

It is very important that the water surrounding the custard does not quite reach the boiling point, or the custard will be watery. Eggs and milk in combination must be cooked at a low temperature.

Remove from oven, and sprinkle with nutmeg.

Chill.

Serve plain or topped with fresh fruit or berries.
