Mini Bread Loaves in 5 Flavors

Makes 8 small loaves

ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2/3 cups vegetable oil
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon baking powder
  • 4 eggs
Use ONE of these:
  • 1 16-oz. can pumpkin OR
  • 2 cups (16 oz.) applesauce OR
  • 2 cups (about 5) bananas OR
  • 3 cups shredded carrots OR
  • 3 cups shredded zucchini
  • Optional: 1/2 cup nuts OR
  • 1/2 cup raisins

directions

Heat oven to 350 degrees. Grease bottoms of 8 small loaf pans. Beat all ingredients together in large bowl on low speed, scraping bowl constantly, for about 30 seconds. Beat on medium speed, scraping bowl frequently, for about 45 seconds. Pour into pans. Bake until wooden pick comes out clean--about 25 - 30 minutes for small loaf pans.
