Banana Bundt Cake
According to Hazon staffer, Avigail Hurvitz Prinz and her dad Mark Hurvitz, this is a great recipe to use up over-ripe bananas. And a darn tasty cake.
ingredients
- 2 1/3 cups of flour
- 1 cup pecans (broken)
- 1 cup dried cranberries
- 1 cup candied ginger
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp salt
- 2 cups sugar
- 1 cup mashed banana (about three bananas)
- 2 tsp vanilla
- 2 large eggs
- 1 cup melted butter
- 1 cup buttermilk

Mix together flour, pecans, cranberries, candied ginger, baking powder, baking soda, salt

in large bowl.

Separately, mix together sugar, banana, vanilla, and eggs. Add butter & buttermilk mix well.

Add dry mixture to wet mixture and combine. Butter and flour a non-stick 10” bundt pan and pour in batter. Bake at 350° for about an hour.
