Chile Relleno Casserole

ingredients

  • 1 27 oz can whole green chiles
  • 1 lb. brick pepper jack cheese
  • 10 eggs
  • 1/4 c. milk
  • 1/4 c. flour
  • 1/2 tsp. salt
  • dashes of pepper
  • 1 lb. grated cheddar cheese

    Slice the pepper jack cheese into 1" thick finger long slices. Open the green chiles and stuff with the slices of pepper jack cheese. Put one slice of cheese in each whole green chile. Line a 13 x 9 baking dish with the stuffed green chiles.

    In a bowl, mix the eggs, milk, flour, salt and pepper. Pour mixture over the green chiles. Sprinkle cheddar cheese over the top of the eggs.

    Bake uncovered at 350 degrees for about 1 hour. (You have to watch it so it doesn’t burn, but make sure it isn’t too jiggly in the middle)
