Black Bean Soup

ingredients

  • 4 cans black beans, drained
  • 1 can corn, undrained
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 2 cans diced tomatoes
  • 2 teaspoons salt
  • 2 teaspoons ground cumin
  • 1 teaspoon dried garlic
  • 1 large bay leaf
  • 2 boxes chicken or beef broth
  • 1 cup cooked rice (optional)

directions

Heat oil in large Dutch oven. Add onion and sauté over med heat. Do not brown. Add remaining ingredients and bring mixture to a boil, lower heat and simmer 30 min.
