SPINACH CASSEROLE
ingredients
- 3/4 C sour cream
- 2 Tbsp minced onion
- 3/4 C flour
- 5 eggs, slightly beaten
- 1 8 oz package cream cheese
- 1/2 C milk
- 1/2 C American cheese, shredded or cubed
- 2 C Sharp cheese, shredded or cubed
- 3 (10oz) packages chopped spinach, thawed and drained
- Salt and pepper to taste
- CRUMB TOPPING
- 1 1/2 C bread crumbs
- 1/2 C Parmesan cheese
- 6 Tbsp butter

Preheat oven to 350. Combine sour cream, onion, flour, eggs, cheese, milk and 1 stick of butter until thoroughly mixed. Mix in spinach until well combined. Melt 2 Tbsp of butter in a 9X13 baking dish.

MAKE CRUMB TOPPING
- 3
Combine 1 1/2 C bread crumbs, 1/3 C Parmesan cheese and 6 Tbsp butter until mixture resembles course crumbs. Pour the spinach mixture into the pan with melted butter. Top with crumb topping. Bake for 30 minutes.
