Strawberry Glazed Cheesecake
ingredients
- 1 1/2 cups graham cracker crumbs
- 2 Tbsp. sugar
- 3 Tbsp. butter, melted
- 2 (8 oz.) and 1 (3 oz.) pkg. cream cheese, softened
- 1 cup sugar
- 2 tsp. grated lemon peel
- 1/4 tsp. vanilla extract
- 3 large eggs
- 1 cup sugar
- 3 Tbsp. cornstarch
- 1/3 cup water
- 1 cup strawberries, mashed
directions
Crust
In a bowl stir together graham cracker crumbs and 2 Tbsp. sugar. Mix in melted butter and turn into 9-inch springform pan. Bake in 375 degree oven for 10 minutes. Cool. Reduce oven temp to 300 degrees.
Filling
Beat cream cheese. Gradually add 1 cup sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs, one at a time. Pour into the crust and bake for 1 hour or until center is set. Cool, then spread with strawberry glaze. Chill for 3 hours.
Glaze
Blend 1 cup sugar and cornstarch in small saucepan over medium heat. Stir in water and strawberries. Cook, stirring constantly until it thickens and boils. Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.
