Cottage House Wild Rice Bread
This is truly a wonderful bread. Loaded with flavor and a hint of orange peel Makes a wonderful sandwich bread or eat as a snack. Works very well with turkey or chicken for sandwiches.
ingredients
- 2 packages red star yeast, rapid rise
- 1/3 cup of warm water
- 1 heaping tablespoon sugar
- 2 cups milk, scalded and cooled
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/4 cup dark molasses
- 1 tablespoon grated orange rind
- 2 teaspoon anise seed
- 1 teaspoon caraway seed, optional
- 2 cups whole wheat flour
- 4-4 1/2 cups bread flour
- 1 cup wild rice, cooked and cooled

Preheat oven to 350 degrees. Grease 2 bread pans.

In large bowl dissolve yeast with cooled milk, sugar and molasses. Stir in orange rind, seeds and whole wheat flour. Beat well. Add wild rice and cover.

Let rise 15 minutes and then add in bread flour to make stiff dough. (Not too stiff).

Knead on floured surface 10 minutes or use mixer with bread hook.

Turn into lightly greased bowl. Cover and let rise until double.

Punch down and divide into two parts. Put in bread pans and let rise until double.

Bake 350 degrees for 40-45 minutes or until done.

You will always be wanting to make this bread. Goes so well with turkey and chicken. Grill this bread and it will be even better!
