Cookies and Cream Cheesecake

Bake at 325° 50-60 minutes

ingredients

Crust
  • 1 1/2 cups crushed crème-filled chocolate sandwich cookies (19 cookies)
  • 2 tablespoons softened margarine
Filling
  • 3- 8oz pkgs. cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1 cup whipping cream
  • 2 tablespoons margarine melted
  • 2 tsp. Vanilla
  • 1 cup coarsely chopped cream-filled chocolate sandwich cookies (11 cookies

    In a medium bowl combine crust ingredients; mix well. Press in bottom and up sides of 10 inch spring form pan. Refrigerate.

    In large bowl, beat cream cheese until smooth. Gradually add sugar beating until smooth. Add one egg and beat until smooth then add the next egg and repeat until all eggs have been added. Slowly add whip cream and vanilla as you continue beating mixture until thoroughly mixed. Stir in 1 cup chopped cookies. Pour into crust lined pan.

    *Bake until edges are set. Turn off oven; let cake stand in oven for 30 minutes or until center is set with door open at least 4 inches. Remove from oven; cool at room temperature on wire rack. Remove sides of pan. Refrigerate overnight.

    *To minimize cracking, place shallow pan half full of hot water on lower rack during baking.
