Pot Roast Dinner

Usually, I make roast, potatoes and carrots in the crockpot with just a can or so of beef broth. This recipe “dresses it up” just a bit, adding more flavor. Of course, you can use a smaller roast and omit the mushrooms, if you like. Both versions can either be baked or done in a crockpot. And you could also add a can of mushroom soup.

ingredients

  • 3-3 1/2 lb. boneless beef pot roast
  • 4 medium potatoes, quartered
  • 4 medium carrots, cut into 1" pieces
  • 1/2 lb. mushrooms
  • 1 envelope onion soup mix
  • 1/2 cup water

directions

Mix soup mix and water. Pour over beef and vegetables. Cover tightly and bake 2 hours at 350° or until tender.
