Honey Teriyaki Chicken & Rice Balls

ingredients

  • 2 - 4 cups cooked jasmine rice2 tbsp toasted sesame seeds4 chicken breast4 chicken thighsveggie oilsalt and pepper1 cup chicken broth1/4 cup honey1/2 cup teriyaki sauce1 tbsp sesame oil

directions

Preheat grill pan over med high heat. Scoop rice using ice cream scoop and your hands. Dampen hands with water to work rice into balls. Set rice balls on plate and sprinkle with sesame seeds. Lightly coat chicken with oil, salt and pepper. Place chicken on got grill and cook for 6 min on the 1st side. While chicken is cooking bring broth and ginger to boil. Add honey. When honey is dissolved into broth, add teriyaki sauce and sesame oil, reduce heat to simmer. Turn chicken and coat liberally with teriyaki sauce using basting brush. Cook chicken 4 min and turn again, basting liberally. Remove chicken to plate. Serve with rice balls.
