Pasta Pomodoro
A light, fresh, quick pasta dish that won’t weigh you down like some others might. Toss in grilled chicken strips and make it an entree.
ingredients
- 4 oz angel hair pasta
- 2 roma tomatoes, diced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 1/2 teaspoons balsamic vinegar
- 1/4 can low-sodium chicken broth
- 1 1/2 teaspoons chopped fresh basil
- 1 tablespoon grated Parmesan cheese

Cook pasta according to package’s directions.

In a small skillet over medium high heat, heat olive oil. Sauté garlic 2-3 minutes until lightly browned. Pour in chicken broth and season with to taste with pepper.

Add pasta and tomatoes to skillet. Toss well and allow to simmer a few minutes for flavors to combine.

Top with fresh basil and Parmesan cheese before eating.
notes
Add crushed red pepper flakes for a little heat. A handful of torn spinach would also make this dish really tasty and nutritious.
