Black Bean and Corn Salsa

ingredients

  • 1 (12 oz.) can whole-kernel corn, drained
  • 1 (15 oz.) can black beans, drained & rinsed
  • 1/2 c. green onions, sliced
  • 1/2 c. red onion, chopped
  • 1 tsp minced garlic
  • 1 tomato, chopped
  • 1 Jalapeno pepper, seeded & finely chopped
  • 1/2 to 1 bunch fresh cilantro leaves, peeled and chopped
  • 1 1/2 tbsp. cumin
  • 1 tbsp. fresh lemon or lime juice
  • 1 tbsp. olive oil

    Drain and rinse black beans, and drain corn. In large bowl, combine corn, beans, cilantro, green onions, red onion, garlic, tomato, and Jalapeno pepper. Mix together well. Add cumin, olive oil, lime juice, salt, pepper, and stir. Add additional seasoning to taste.

    Refrigerate for 1-2 hours before serving.
