CHICKEN OR TURKEY TETRAZZINI
ingredients
- • 4 or more cups chicken or turkey (cooked)
- • 7 - 12 ounce box spaghetti noodles (broken in half, cooked, and drained)
- • 1/2 cup butter
- • 1/2 cup flour
- • 1 teaspoon salt
- • 1/2 teaspoon pepper
- • 2 cups chicken broth
- • 2 cups whipping cream (or half and half)
- • 1/4 to 1/2 cup white cooking wine
- • 1/2 cup parmesan cheese
- • 1 can mushrooms, drained (optional)

• Carefully melt butter (do not burn)

• Blend in flour and seasonings, stirring constantly until smooth and bubbly

• Remove from heat, stir in broth and cream

• Bring to a gentle boil, stirring constantly (do not burn)

• Remove from heat, add wine and stir

• Pour most of your sauce into a baking dish

• Stir in meat and spaghetti to desired consistency (you’ll want it a bit soupy)

• Add more sauce if needed (it is easier to add sauce then to take out noodles)

• Hint: The broken spaghetti is easier to stir

• Sprinkle with parmesan cheese

• Cover with foil and bake at 350° for 30 minutes, or until bubbly in center
