Italian Chopped Salad
We invited Corey’s girlfriend Shawnee and her family for a Monday night football game and some dinner. Shawnee’s mom Lisa brought this dish and I loved it! She is vegetarian, so this dish also tastes great with the salami omitted if you prefer.
ingredients
- 1 large head romaine lettuce, finely chopped
- 4 large plum tomatoes, seeded, finely chopped
- 1 green bell pepper, finely chopped
- 4 ounces Italian dry salami, finely chopped
- 1 cup canned chickpeas (garbanzo beans) drained
- 4.5 ounces mozzarella, diced
- 1.2 cup pitted black olives, finely chopped
- 1/2 cup pimiento stuffed green olives, you guessed it....finely chopped.
- dressing
- 3/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1.5 tablespoons minced fresh basil
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh lemon juice
- pinch of sugar
- salt and pepper to taste
directions
Combine first 8 ingredients in large bowl. Blend the dressing ingredients in a separate small bowl. Toss together, season with salt and pepper
notes
This salad does not keep well after the dressing is added, so wait until just before serving
