Sour Cream Enchiladas
Kristen’s birthday dinner!
ingredients
- 1 1/2 pounds chicken breast with Nature’s Seasoning
- 2 cups grated cheese (cheddar or co-jack)
- 1 medium onion, chopped
- 1/4 cup butter
- 3 tablespoons flour
- 2 cups chicken broth
- 2 cups sour cream
- 1 4-ounce can of chopped green chilies
- 8-10 flour tortillas

1 1/2 pounds chicken breast, boiled with Nature’s Seasoning for 30 minutes. Cool and cut into small pieces.

Saute onions in butter. Add flour and stir. Stir in broth and simmer until thickened. Add sour cream and chilies. Add one cup cheese and mix. In 13x9 pan, assemble enchiladas. Place chicken in center of tortilla. Add 2-3 tablespoons of cheese then 2-3 tablespoons sauce. Roll tightly and place in pan. Continue until all ingredients are used. Pour remaining sauce over assembled enchiladas. Top with grated cheese. Bake at 350 degrees for 45 minutes or until bubbles. Let stand 5-10 minutes before serving.
