Layered Enchilada Pie

ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 T butter
  • 1 t salt
  • 1/4 t pepper
  • 1 3/4 t chili powder
  • 1 4 1/2 oz can chopped olives
  • 2 8 oz cans tomato sauce
  • 1-cup corn drained
  • 8 corn tortillas
  • 1/2 lb or 2 cups grated sharp cheddar cheese
  • 2/3 cup of water (last)

directions

Brown beef, onion in batter. Add seasonings, olives, corn and tomato sauce, In round 2 qt casserole, alternate layers of tortillas (2 at a time) meat, sauce, and cheese. Sprinkle remaining 1/2 cup grated cheese on tops. Add water. Cover. Bake 375 for 30 minutes.
