Layered Enchilada Pie
ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 T butter
- 1 t salt
- 1/4 t pepper
- 1 3/4 t chili powder
- 1 4 1/2 oz can chopped olives
- 2 8 oz cans tomato sauce
- 1-cup corn drained
- 8 corn tortillas
- 1/2 lb or 2 cups grated sharp cheddar cheese
- 2/3 cup of water (last)
directions
Brown beef, onion in batter. Add seasonings, olives, corn and tomato sauce, In round 2 qt casserole, alternate layers of tortillas (2 at a time) meat, sauce, and cheese. Sprinkle remaining 1/2 cup grated cheese on tops. Add water. Cover. Bake 375 for 30 minutes.
