Breakfast Pizza

Another fabulous friend served this for brunch.

ingredients

  • 8-oz. cooked sausage (any flavor - I used maple)
  • 1 can (8.5 oz) refrigerated crescent rolls (I used the reduced fat)
  • 1 cup frozen hash browns potato cubes, thawed
  • 4 oz. (1 cup) shredded sharp Cheddar cheese
  • 3 eggs, lightly beaten
  • 3 Tbsp milk
  • 1/2 tsp salt
  • 1 tsp black pepper
  • Optional (I didn’t use any of these):
  • 3 Tbsp each, diced red and yellow pepper
  • 1/4 cup thinly sliced green onion
  • 2 Tbsp grated Parmesan cheese

    Preheat oven to 350 degrees.

    Separate rolls into eight triangles. Place in ungreased 12“ rimmed pizza pan with points toward the center. press together, seal perforations and form a circle 1” larger in diameter than the pan bottom. Turn edges under to make a slight rim.

    Bake crust for about 5 minutes.

    Sprinkle cooked sausage over crust.

  • 5

    Top with potatoes.

  • 6

    Add peppers and/or green onions, if desired.

    Sprinkle with Cheddar cheese.

    Stir eggs, milk, salt and pepper in small bowl; pour evenly over pizza.

  • 9

    Sprinkle with Parmesan.

  • 10

    Bake 20 minutes or until eggs are set and crust is golden.
