Chicken Cacciatore
ingredients
- 3 Lbs Chicken Pieces
- 1/2 Cup Flour
- 2 Tbsp Oil
- 1 Large Onion, Chopped
- 2 Cloves Garlic, Chopped
- 1 Green Pepper, Cubed
- 1 Red Pepper, Cubed
- 1/4 Lb Mushroom Slices
- 14 Oz Can Stewed Tomatoes
- 1 Tbsp Tomato Paste
- 1/4 Tsp Thyme, Oregano and Basil
- 1/2 Tsp Salt and Pepper
- 1 Cup Milk
- 3 Tbsp Fresh Parsley

Dust chicken with flour. Heat oil in large skillet. Brown well. Remove and reserve.

Add onions, garlic, peppers and mushrooms. Cook 5 minutes until tender. Sprinkle with remaining flour (1/4 Cup).

Stir in tomatoes, paste, herbs, salt and pepper. Break tomatoes. Bring to a boil. Mixture will be thick.

Add chicken. Simmer gently covered for 40 minutes. Remove chicken. Keep warm.

Add milk. Heat thoroughly.
