Chicken Cacciatore

ingredients

  • 3 Lbs Chicken Pieces
  • 1/2 Cup Flour
  • 2 Tbsp Oil
  • 1 Large Onion, Chopped
  • 2 Cloves Garlic, Chopped
  • 1 Green Pepper, Cubed
  • 1 Red Pepper, Cubed
  • 1/4 Lb Mushroom Slices
  • 14 Oz Can Stewed Tomatoes
  • 1 Tbsp Tomato Paste
  • 1/4 Tsp Thyme, Oregano and Basil
  • 1/2 Tsp Salt and Pepper
  • 1 Cup Milk
  • 3 Tbsp Fresh Parsley

    Dust chicken with flour. Heat oil in large skillet. Brown well. Remove and reserve.

    Add onions, garlic, peppers and mushrooms. Cook 5 minutes until tender. Sprinkle with remaining flour (1/4 Cup).

    Stir in tomatoes, paste, herbs, salt and pepper. Break tomatoes. Bring to a boil. Mixture will be thick.

    Add chicken. Simmer gently covered for 40 minutes. Remove chicken. Keep warm.

    Add milk. Heat thoroughly.

Serve over rice or noodles.
