Potato Rolls
ingredients
- 2 c. mashed potatoes
- 1 c. shortening
- 2 c. scalded milk
- 1 c. sugar
- 10 c. flour
- 2 Tbsp yeast
- 1 c. warm water
- 6 eggs, beaten
- 4 tsp. salt

Dissolve the yeast in water. Pour hot milk over potatoes, shortening, sugar and salt. When cooled slightly add well beaten eggs and yeast. Add 8 cups of flour using the last 2 cups to knead with. Refrigerate for 24 hours. Bake at 400 degrees for 10-20 minutes.

This dough will keep for a week in the refrigerator. This recipe also makes good cinnamon rolls, coffee rings or hot rolls.
