Grasshopper Squares
i remember having these when we were young at Christmas. mrs. Louise submitted them to the Bethany cookbook and I am sooo glad.
ingredients
- Batter:
- 1 1/2 cup sifted flour
- 2 cup sugar
- 3/4 cup plus 2 Tablespoons instant cocoa
- 1 1/2 teaspoon salt
- 1 1/2 cup butter
- 2 Tablespoons corn syrup
- 4 eggs
- 2 teaspoons vanilla
- 2 cup nuts, coarsely chopped
- Frosting:
- 2 cups sifted 10x sugar
- 2 Tablespoons milk
- 4 Tablespoons soft butter
- 1 teaspoon mint extract
- Chocolate Glaze:
- 2 squares unsweetened chocolate
- 2 tablespoons butter

1. Sift first 4 ingredients into mixing bowl. Add butter, eggs, vanilla and corn syrup. Mix thoroughly.

2. Add nuts and spread batter evenly in greased 13 x 9 x 2 inch pan and bake in 350 degree oven for 45 minutes, or until done. Cool.

3. Combine ingredients of frosting and beat. Spread over cooled squares and let set.

4. When frosting is firm, melt chocolate and butter for glaze in the top of a double broiler and spread on at once.

5. Cut into squares or bars.

In the Bethany cookbook these were the additional instructions: "Original recipe said it makes 10 dozen squares. I usually get 8 dozen at the most."
