Grasshopper Squares

i remember having these when we were young at Christmas. mrs. Louise submitted them to the Bethany cookbook and I am sooo glad.

  • 1. Sift first 4 ingredients into mixing bowl. Add butter, eggs, vanilla and corn syrup. Mix thoroughly.

  • 2. Add nuts and spread batter evenly in greased 13 x 9 x 2 inch pan and bake in 350 degree oven for 45 minutes, or until done. Cool.

  • 3. Combine ingredients of frosting and beat. Spread over cooled squares and let set.

  • 4. When frosting is firm, melt chocolate and butter for glaze in the top of a double broiler and spread on at once.

  • 5. Cut into squares or bars.

In the Bethany cookbook these were the additional instructions: "Original recipe said it makes 10 dozen squares. I usually get 8 dozen at the most."
