Apple-Almond Cheesecake
ingredients
- Crust:
- Cream together:
- 1/2 Cup Butter, Softened
- 1/3 Cup Sugar
- 1/2 Tsp Vanilla
- Add:
- 1 Cup Flour
- Filling:
- Cream Together:
- 8 oz Cream cheese
- 1/4 Cup Sugar
- Add:
- 1 Egg
- 1/2 Tsp Vanilla
- Topping:
- Combine:
- 1/3 Cup Sugar
- 1/2 Tsp Cinnamon
- Toss With:
- 4 Cups Sliced Apples
- Hot Caramel Sauce:
- 1 Tbsp Melted Butter
- 2 Tbsp Brown Sugar
- 2 Tsp Corn Syrup
- 2 Tbsp Condensed Milk
- Pinch Salt

Spread crust mixture on bottom and half way up sides of a greased 9 inch spring form pan. Bake 400° 10-15 minutes.

Mix filling well and pour into pan

Place apples on crust. Sprinkle with 1/4 cup sliced almonds.

Bake 450° for 10 minutes then reduce heat to 400° for 25 minutes

Cook and stir caramel sauce until thick and caramel colour and mixture leaves pan. Remove from heat and add 4 tbsp hot water, a little at a time. Return to heat. Simmer 2-3 minutes. Let cool.
