Chicken Gravy

ingredients

  • 2 tbsp butter
  • 1 small onion -- diced
  • 4 stalks celery -- diced
  • 4 C chicken stock
  • 1 bay leaf
  • 4 chicken breast, no skin, no bone, R-T-C
  • 1/3 C all-purpose flour
  • salt and pepper

directions

Melt butter in pot & saute onion and celery until soft, about 5 minutes. Add stock and bay leaf & bring to a boil. Add chicken breasts, and reduce heat to low, and simmer 20 minutes.

To make gravy, heat reserved fat in same pot. Add flour, and cook over low heat, stirring constantly for 2 minutes. Gradually stir in reserved liquid (there should be 3 1/2 to 4 cups) bring to a boil. Reduce heat and season with salt & pepper. Continue to simmer for 5 minutes, stirring occasionally.

Slice the breast and add to gravy.
