Beef Tortilla Stew

ingredients

  • 2 pounds of stew meat, trimmed & cut into bite-size pieces
  • 2 T. cooking oil
  • 3 garlic buds
  • 1 small onion
  • 1 jalapeno pepper
  • 1 can (10 3/4 oz.) tomato soup
  • 1 can (10 1/2 oz.) beef broth
  • 1 can (10 1/2 oz.) chicken broth
  • 1 can (10 oz.) rotel tomatoes
  • 1 t. chili powder
  • 1 t. cumin
  • 1 soup can full of water
  • 1/2 t. pepper
  • Tabasco to taste
  • 4 fresh corn tortillas cut into strips
  • 10 oz. bag of frozen mixed veggies

directions

  • 1

    -Brown stew meat in oil with onion & garlic in a large pot or dutch oven.

  • 2

    -Add remaining ingredients, except tortillas & frozen veggies. Cook at least 1 hour at med. heat.

  • 3

    -Add tortilla strips & frozen veggies & cook another 15 minutes before serving.
