Beef Tortilla Stew
ingredients
- 2 pounds of stew meat, trimmed & cut into bite-size pieces
- 2 T. cooking oil
- 3 garlic buds
- 1 small onion
- 1 jalapeno pepper
- 1 can (10 3/4 oz.) tomato soup
- 1 can (10 1/2 oz.) beef broth
- 1 can (10 1/2 oz.) chicken broth
- 1 can (10 oz.) rotel tomatoes
- 1 t. chili powder
- 1 t. cumin
- 1 soup can full of water
- 1/2 t. pepper
- Tabasco to taste
- 4 fresh corn tortillas cut into strips
- 10 oz. bag of frozen mixed veggies

-Brown stew meat in oil with onion & garlic in a large pot or dutch oven.

-Add remaining ingredients, except tortillas & frozen veggies. Cook at least 1 hour at med. heat.

-Add tortilla strips & frozen veggies & cook another 15 minutes before serving.
