Karithopita (Walnut Cake)
This cake can be a little heavy for some people’s taste. To give it a lighter taste, reduce the oil to 1/2 cup and add two more eggs.
ingredients
- 2 cups Bisquick
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 cup whole milk
- 1 cup vegetable oil
- 1 cup finely chopped walnuts
- 4 eggs
- 1 tablespoon grated orange rind
- 1 cup sugar
- 1 cup water
- juice of 1/2 lemon

Boil 1 cup sugar, 1 cup water and juice of half a lemon together in a saucepan for 10 minutes.

Set syrup aside.

Preheat oven to 350 degrees and grease a 13”x9” baking pan.

In the large bowl of an electric mixer, combine the milk, oil, eggs, 1 cup sugar, cinnamon, cloves and orange rind.

In a separate bowl, combine the flour, baking soda and baking powder.

Gradually mix flour mixture into the liquid mixture until blended well.

Stir in the walnuts.

Pour batter into the greased baking pan and bake for 30 minutes until golden brown and a knife inserted into the center comes out clean.

Pour room temperature syrup over hot cake.
