Savory Lentils
High Fiber tasty lentils. Serve with brown rice or quinoa for robust and filling side dish or snack.
ingredients
- Ingredients:
- 1 15 oz. can cooked lentils
- 2 - 3 slices of turkey bacon
- 1/2 a medium onion
- 1 carrot
- 1 celery stalk
- 1 garlic clove
- 1/4 tsp. ground cumin
- juice of one lime
- 1/2 cup chicken or vegetable broth
- 1 Tbsp. of coconut, grape seed oil or olive oil
- Salt and pepper to taste

1. Rinse and drain lentils and set aside.

2. Brown the turkey bacon in a tsp. of oil and remove from pan.

3. Chop vegetables: celery, carrot, and onion.

4. Heat pan. Add remaining oil and heat.

5. Add vegetables and sauté until tender and brown, sticking to bottom of pan.

6. Deglaze the pan with chicken or vegetable stock: Pour a small amount of cold stock in hot pan to loosen stuck veggies. This is what creates the robust flavor of the dish.

7. Cut bacon into small pieces and add to pan along with cumin, salt, pepper, lime juice and lentils.

8. Add remaining broth, heat through and serve.

I make this dish ahead and refrigerate. It's easy to reheat and serve as quick side dish or snack. Also delicious unheated as a travel snack.
