Garlic Cedar Plank Salmon
ingredients
- 2 tbsp oil
- 2 jalapenos sliced into rings
- 1 tbsp minced garlic
- 1/2 cup white wine
- 3 tbsp whole grain mustard
- 1 cup apricot preserves
- 4 (4X4 inch) pieces parchment paper
- 4 cedar planks
- 4 salmon fillets
- 2 tsp sea salt
- 1 tsp gound pepper
- rosemary
- 1 lemon, zested
directions
Preheat oven to 400. In small pan heat oil over med heat. Add jalapenos and carmelize. Add garlic saute and add wine before garlic is brown. Add mustard and preserves and bring to simmer. Simmer on low for 20 min and let cool completely. Place parchment paper on planks. Season salmon with salt, pepper and rosemary. Place salmon on planks. Top salmon liberally with apricot mixture. Place cedar on burner. When plank has begun to smoke place into oven. Cook for 20 min. Garnish with zest.
