Chicken Satay with Peanut Sauce
This dish has an exotic feel to it. You can never make enough for the table.
ingredients
Marinade- 1/4 C. Soy Sauce
- 2 T. Lemon Juice
- 1 T. Honey
- 1 tsp. Ground Coriander
- 1/4 tsp. Black Pepper
- 1/4 Red Pepper Flakes
- 1 Clove Garlic, Minced
- 1 Pound Boneless, Skinless Chicken (Breast or Thigh), cut into 1" strips
- 3/4 C. Chicken Broth
- 1/2 C. Peanut Butter
- 1 tsp. Sesame Oil
- 1 tsp. Soy Sauce
- 1 tsp. Lemon Juice
- 1/8 tsp. Ground Ginger
- 1/8 tsp. Black Pepper
- 1 Green Onion, Finely Chopped
- 1 Clove Garlic, Minced

Marinade
Combine the first seven marinade ingredients (Soy Sauce through Garlic) in a bowl or seal-able plastic bag and mix. Add the chicken and let the meat marinade, refrigerated, for several hours or overnight.
Peanut Sauce
Combine the chicken broth and peanut butter in a small bowl; whisk the mixture until blended. Stir in the remaining ingredients and mix well. Cover the peanut sauce and let stand at least one hour for the flavors to blend.

To prepare the marinated chicken, weave the strips onto skewers. Cook over hot coals or under the broiler for three to five minutes per side until the meat is cooked through, basting frequently with the reserved marinade.

Serve your chicken skewers over rice with the peanut sauce.

This dish is entirely customizable. You can add more peanut butter or more ginger. You can switch the chicken for pork. Make the dish your own.
