Ray's Tunisian Sunset Tagine
Our Moroccan Favorite!
ingredients
- 2 lb of either pork, lamb or chicken into 2# chunks
- 4 spicy sausages halved
- 2 onions, quartered
- 4 cloves garlic, crushed
- 2 tsp cumin
- 1 tsp chili powder
- 2 cans whole peeled tomatoes (around 8 oz each)
- 1 can garbanzo beans
- 12 -16 green olives
- lemon juice
- diced ginger
- cilantro or coriander
directions

Brown onions,garlic,meat,sausages with cumin and chilli.
- 2
Add tomatoes and water (if required) and simmer until meat is tender.

Add garbanzos and olives and heat through, add lemon juice and ginger to taste.

Garnish with cilantro and serve with natural yoghurt and couscous,....sensational !!
