Ray's Tunisian Sunset Tagine

Our Moroccan Favorite!

ingredients

  • 2 lb of either pork, lamb or chicken into 2# chunks
  • 4 spicy sausages halved
  • 2 onions, quartered
  • 4 cloves garlic, crushed
  • 2 tsp cumin
  • 1 tsp chili powder
  • 2 cans whole peeled tomatoes (around 8 oz each)
  • 1 can garbanzo beans
  • 12 -16 green olives
  • lemon juice
  • diced ginger
  • cilantro or coriander

directions

  • 1

    Brown onions,garlic,meat,sausages with cumin and chilli.

  • 2

    Add tomatoes and water (if required) and simmer until meat is tender.

  • 3

    Add garbanzos and olives and heat through, add lemon juice and ginger to taste.

  • 4

    Garnish with cilantro and serve with natural yoghurt and couscous,....sensational !!
