Chicken "Haystack" Salad

ingredients

  • 1 cup carrots, shredded
  • 1/2 cp onions, chopped (I used green)
  • 1 cup celery, diced
  • 2 cups cooked chicken, diced
  • 1 cup mayonnaise
  • 1 can (4 oz) shoestring potatoes
  • Egg slices
  • Olives

directions

Combine carrots, onions, celery and chicken. Moisten with mayonnaise. Add shoestring potatoes to salad just before serving, to prevent them from becoming soggy. Serve on lettuce. Trim with egg slices and olives if you wish.
