Berry-Mandarin Tossed Salad
ingredients
Dressing- 1/4 C sugar or splenda
- 2 Tbsp cider vinegar
- 2 Tbsp honey
- 1 1/4 tsp lemon juice
- 1/4 tsp paprika
- 1/2 tsp ground mustard
- 1/2 tsp grated onion
- 1/4 tsp celery seed
- Dash salt
- 1/3 C vegetable oil
- 8 C torn mixed salad greens
- 2 C sliced strawberries
- 1 can (11 oz) mandarin oranges, drained
- 1 medium purple onion sliced and separated into rings
- 1/3 C slivered almonds, toasted
- 4 bacon strips, cooked and crumbled

In a 2-cup microwave-safe bowl, combine the first nine ingredients.

Microwave, uncovered, on high for 1-1/2 to 2 minutes; stir until sugar is dissolved. Whisk in oil. Cover and refrigerate until serving salad.

In salad bowl, combine the greens, strawberries, oranges, onion, almonds,

And bacon. Drizzle with dressing; gently toss.

Note: I make smaller salad and store remaining dressing in refrig for up to a week.
