Potato Corn Bake

ingredients

  • 1/2 lb fried, crumbled bacon
  • 1/2 cup finely chopped green pepper
  • 1/3 cup finely chopped onion
  • 15 oz can of creamed corn
  • 2 cups milk
  • 3 TB butter
  • dash of salt
  • 1/8 tsp pepper
  • 2 cups mashed potato flakes
  • 1/2 cup sour cream
  • 1/4 cup parmesan
  • 2 TB finely chopped green onion

directions

Grease a 9 " square pan. Fry green pepper and onion in the bacon drippings til tender. Remove fat with a paper towel, then stir in corn, milk, butter, salt and pepper. Cook until bubbles. Remove from the heat and stir in the potato flakes and sour cream. Spoon into the pan. Top with bacon bits, parmesan and green onions. Bake 374 degrees for 20-25 minutes.
