ingredients

  • 1 cup sugar
  • 1/4 cup butter
  • 1/2 cup light corn syrup
  • 2 cups pecan halves
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda

directions

Combine sugar, butter, and corn syrup in heavy 2 quart saucepan. Cook over medium flame to soft-ball stage (234 degrees or approx. 3 minutes). Add pecans; continue cooking to hard crack stage (290 degrees or approx. 8 minutes). You have to watch these very carefully because they will burn very fast. Turn off flame and add vanilla and baking soda. Beat until foaming stops. Pour into greased cookie sheet. Let cool until candy can be broken into pieces. Place candy in freezer 10 to 15 minutes to speed up the setting process. Store in airtight container. Makes 2 pounds.
