Spring Salad

  • 10 ounces large shell macaroni, uncooked

  • 1½ c. sliced radishes

  • 1 medium cucumber, cubed

  • 1 c. chopped green pepper

  • 3 medium carrots, peeled & sliced

  • ¼ c. chopped onion

  • ¾ c. low-calorie mayonnaise

  • ⅓ c. sugar

  • 1 tsp dill weed

  • 1 tbsp vinegar

  • Cook shell macaroni in unsalted water. Drain. Combine cooked shells, radishes, cucumber, green pepper, carrots and onion.

  • In separate bowl, mix mayonnaise, sugar, sweetener, dill weed and vinegar. Mix mayonnaise mixture with shells/vegetable mixture.

  • Chill. Store salad in refrigerator.
