Curried Beef Pot Pie
A great way to use up any leftover beef. I have used steak, London Broil, pot roast and more.
ingredients
- 2 Tbsp olive oil
- 1 onion, diced
- 1 Tbsp minced garlic
- 1 Tbsp minced ginger
- 2 Tbsp curry powder
- 3 Tbsp all purpose flour
- 1 cup diced carrots
- 1 cup diced potatoes
- 3 cups beef broth
- dash cinnamon
- 2 Tbsp mango chutney
- 1/2 cup golden rasins
- 1/2 cup frozen peas
- 1/4 cup chopped parsley
- 2 cups diced beef
- 1 sheet puff pastry
- 1 egg, lighly beaten

Heat oil and saute oinion until tender. Add garlic, ginger, curry and flour. Saute 2 more minutes.

Add carrots, potatoes, broth and cinnamon. Simmer ~ 20 minutes, until tender.

Add chutney, peas, beef and parsley. Heat through.

Season with salt and pepper.

Pour into 1 1/2 quart dish, cover with puff pastry and brush with egg.

Slit and bake at 350 degrees for 40 minutes or until golden brown on top.

Let rest for 10 minutes and be careful as the inside is hot!
