Vegetable Beef Soup
ingredients
- 1-1 1/2 lbs. beef stew meat, cut into 1/2-inch cubes
- 2 T oil
- 2 bay leaves
- 1 t dried oregano
- 1 T salt
- 1/4 t pepper
- 1 (10 oz) pkg. frozen corn
- 1 (16 oz) can diced tomatoes
- 1 1/2 c cubed, peeled potatoes
- 1 c frozen green beans
- 1 c sliced carrots
- 1 c sliced celery
- 1/2 c chopped onion
directions
Brown stew meat in oil in a large dutch oven. Drain fat and add 8 cups of water, bay leaves, salt, oregano, and pepper and bring to a boil. Stir in meat, tomatoes, corn, potatoes, beans, carrots, celery and onion. Return to boiling and reduce heat. Cover and simmer about 30 minutes or until the vegetables are crisp-tender. Discard bay leaves.
