Chinese Chicken Salad
ingredients
Marinade and Salad- 1 pound chicken
- 1 Tbsp sesame oil
- 1 Tbsp chili-garlic sauce
- 1 Tbsp minced ginger
- 1 Tbsp minced garlic
- 2 tsp fresh lime juice
- 1/4 Savoy Cabbage, thinly sliced
- 2 ounces slivered snow peas
- 4 scallions, sliced
- 1/4 red pepper, sliced
- 1/4 cup cilantro
- 1/4 cup rice/cider vinegar
- 3 Tbsp peanut/olive oil
- 2 Tbsp sesame oil
- 1 Tbsp smooth peanut butter
- 1 1/2 Tbsp honey
- 1 tsp Dijon mustard
- 1 tsp soy sauce
- salt and pepper to taste

Combine first set of ingredients and marinade chicken for ~2 hours or overnight.

Grill chicken, cut into strips.

In a large mixing bowl, combine cabbage, peas, pepper and cilantro.

Toss with 1/4 dressing

Top with chicken. Serve with additional dressing on side.
