Cracked Conch

Depends on how much you can stand to “bruise” !!
You can take the boys out of the Island...
ingredients
- 4 conchs cleaned & tenderized (bruised)
- 4 eggs beaten
- 1 cup flour
- 1 tbsp olive oil
- Salt & Pepper
- small amount of lemon juice
directions
Pour lemon juice over the “bruised” conch. Let sit for 20 minutes, then shake off juice and season with salt and pepper. Dip seasoned conch in beaten eggs, then pat with flour. Fry in heated oil about 3 minutes on each side til lightly golden brown. Will need more olive oil to fry additional conch.
