Jimmy's Chocolate Cake
ingredients
- Cake:
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 cups cocoa powder (unsweetened)
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs, room temperature
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla
- 1 cup boiling water
- Frosting:
- 1/3 cup unsalted butter
- 1/4 cup water
- 1/2 cup cocoa
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 1 teaspoon coffee (optional)

Cake:

1. Preheat oven to 350 degrees.

2. Combine dry ingredients

3. Add eggs, one at a time, milk, oil and vanilla, and beat for 2 minutes.

4. Stir in boiling water.

5. Pour into cake pan(s) or cupcake molds, and bake, 30-35 minutes.

Frosting:

1. Melt together butter and water, and remove from heat.

2. Stir in cocoa.

3. Mix in powdered sugar, 1 cup at a time.

4. Add vanilla, coffee, or any other extract you’d like to flavor frosting.

5. If too thick, add water to thin. You can beat the frosting if you’d like it to be creamier, or use it as a glaze. This recipe is pretty versatile and foolproof!
