Patsy's Country Breakfast
ingredients
- 12 oz pkg breakfast sausage
- 1/2 cup chopped onion
- 4 cups frozen hashbrowns, thawed
- 1 1/3 cups shredded colby/Monterey cheese (or your favorite cheese)
- 3 beaten eggs
- 1 cup milk
- 1/4 tsp pepper
- salsa
directions
Cook sausage and onions, drain. In an 8x8 pan layer potatoes, sausage and half of the cheese. In a bowl combine eggs, milk and pepper. Can be covered and refrigerated overnight prior to cooking in the morning. Or you can cook ahead of time and re-heat in original pan with foil covering. Bake covered at 375° for 45 to 50 minutes. Serve with salsa or your favorite topping.
