Nishioki Salad
A favorite salad of the Else family.
ingredients
- Butter lettuce or mixed baby greens
- Dried cranberries
- Toasted pine nuts
- Goat cheese torn into bite sized pieces
- 1/2 cup basil olive oil
- 1/2 cup “seasoned” rice vinegar
- 2 minced garlic cloves
- 1 tablespoon Dijon mustard

For vinaigrette, mix together olive oil, vinegar, garlic and Dijon. This may be made a day ahead.

Serve lettuce sprinkled with cranberries, pine nuts, and goat cheese. Drizzle with vinaigrette.
