Summertime Pasta Salad
ingredients
- 1 c cherry tomatoes, halved
- 8 oz corkscrew pasta, fusilli or rotini, cooked, drained and cooled
- 1/4 c chopped fresh parsley
- 1/4 c finely chopped fresh basil
- 8 green onions, sliced, including some tender green tops
- 1/2 red bell pepper, seeded and diced
- 1/3 lb sliiced dry salami, cut into strips
- 1 c drained, rinsed canned garbanzo beans
- 3/4 oz feta cheese, cut into small pieces
- 1/4 c freshly grated parmesan cheese
- salt and pepper to taste
- 1/4 c vegetable oil
- 1/4 c olive oil
- 3 T red wine vinegar
- 3 cloves garlic, cut up
- 1 green onion, including some tender green tops, cut up
- 1/4 t salt
- 1/4 t dried thyme
- 1/4 t oregano
- 1/4 t basil
- 1/4 t celery salt
- 1/4 t pepper
- 1/4 t paprika
- 1 T freshly grated parmesan cheese
- 1 t dijon mustard
directions
Place tomatoes cut side down on paper towels to drain for 10 minutes. In large salad bowl place pasta. Add drained pasta and all remaining ingredients except dressing. Drizzle dressing evenly over top and toss to mix well. Refrigerate for 4 hours.
Dressing
In food processor combine all ingredients and chill for an hour.
