Coconut Pecan Pound Cake
ingredients
- 2 c sugar
- 1 c cooking oil
- 4 eggs , slightly beaten
- 3 c all purpose flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 c buttermilk
- 1 c pecans, chopped
- 1 c coconut
- 2 tsp coconut extract

Mix sugar and oil. Add eggs and beat. Sift together flour, salt,soda and baking powder. Add alternately with buttermilk using 1/4 c buttermilk at a time. Stir in nuts and coconut and then add flavoring. Bake at 325for 1 hour and 5 minutes. Leave cake in tub pan.

Glaze:

1 c sugar, 2 tsp butter, 1/2 c water, 1 tsp coconut extract.

Combine everything except flavoring. Boil until sugar resolved. Remove from heat. Add flavoring. Pour over cake and leave in pan for 4 hours.
