Fennel Salad with apples, walnuts, and dried cherries
You can use any dried fruit and nut combination.
ingredients
- 6 tbs. freshly squeezed lemon juice
- 2 tbs. extra virgin olive oil
- sea salt and fresh ground pepper
- 3 fennel bulbs, trimmed, cored,
- quartered an sliced thin
- 2 Granny Smith apples, peeled, cored
- and julienned
- 1 cup dried cherries
- 1/2 cup cilantro leaves, roughly
- chopped
- 1 cup toasted walnuts
directions
Mix lemon juice, olive oil, salt and pepper in a large bowl. Add remaining ingredients. Toss and serve.
