A.J.'s Panko Crusted Halibut with Mango Avocado Salsa

ingredients
- 4 pieces of halibut
- 1 cup flour
- 2 cups of Panko crumbs
- 3-4 eggs
- olive oil
- parmesan cheese
- salt and pepper

Halibut

1. Rinse and dry halibut pieces and set aside on plate.

2. Pre-heat medium-large fry pan on medium heat, add oil to cover pan, 1/8 inch deep.

3. Put flour, beaten eggs, and Panko into 3 separate shallow dishes. Sprinkle Panko with parmesan cheese and salt and pepper.

4. Take each piece of halibut and lightly dust with flour, dip in egg, then coat well with panko. Set aside.

5. Add halibut to pre-heated pan and cook about 5 minutes per side.

6. Remove from pan and drain on paper towels.

Top each piece with mango salsa and serve.
Mango Avocado Salsa
- 1
Toss together in a medium bowl:

1 mango, peeled and diced
- 3
1 red pepper, chopped
- 4
3/4 cup chopped red onion
- 5
1 tablespoon sugar
- 6
2 tablespoons white white vinegar
- 7
1 teaspoon salt
- 8
1 avocado, diced.
