Garlic lemon chicken
delicious, easy and goes well with some crispy asparagus
ingredients
- 1 tablespoon salt cured lemon rind (alternatively lemon rind from one fresh lemon)
- 2 tablespoons roasted garlic
- 2 tablespoons low-sodium tahini
- 1/2 cup fresh lemon juice
- 2 teaspoons paprika
- Olive oil
- 4 boneless, skinless organic chicken breasts
- Salt and pepper
- 4 onion slices, thickly cut
- Heavy duty aluminum foil, cut into 4 pieces about 5 x 6"

1. Preheat oven to 350 degrees

2. Add first 5 ingredients to small food processor or blender and blend until smooth
- 3
3. Drizzle oil on each of 4 pieces of aluminum and top with chicken.

4. Season chicken with salt and pepper. Brush garlic mixture over each piece and top with onion slice

5. Fold each piece of foil into a small square, crimping edges and making a packet.

6. Put each packet into a shallow baking dish and bake for 50-60 minutes until done.
