delicious, easy and goes well with some crispy asparagus

ingredients

  • 1 tablespoon salt cured lemon rind (alternatively lemon rind from one fresh lemon)
  • 2 tablespoons roasted garlic
  • 2 tablespoons low-sodium tahini
  • 1/2 cup fresh lemon juice
  • 2 teaspoons paprika
  • Olive oil
  • 4 boneless, skinless organic chicken breasts
  • Salt and pepper
  • 4 onion slices, thickly cut
  • Heavy duty aluminum foil, cut into 4 pieces about 5 x 6"

    1. Preheat oven to 350 degrees

    2. Add first 5 ingredients to small food processor or blender and blend until smooth

  • 3

    3. Drizzle oil on each of 4 pieces of aluminum and top with chicken.

    4. Season chicken with salt and pepper. Brush garlic mixture over each piece and top with onion slice

  • 5

    5. Fold each piece of foil into a small square, crimping edges and making a packet.

  • 6

    6. Put each packet into a shallow baking dish and bake for 50-60 minutes until done.
