Grandma's Christmas Eve Hot Dish
This is a top secret family recipe! Grandma Agnes King made this dish a family tradition for Christmas Eve dinner. We look forward to the pleasure of devouring this delightful seafood macaroni and cheese every year!
ingredients
- 1/2 cup butter
- 3/4 cup onion, chopped
- 3/4 cup green onion, chopped
- 6 oz. mushrooms
- 2/3 cups flour (more if needed)
- 2 tsp. salt
- 1/2 tsp. Worcestershire
- 1/4 tsp. pepper
- 4 cups milk
- 1 1/2 cups cheese (jack and/or cheddar)
- 1 Tbsp. lemon juice
- 1 1/2 tsp. dry mustard
- 12 - 14 oz. lobster meat cut into bite-size pieces
- 12 - 14 oz. crabmeat
- 8 - 12 oz. shrimp cut into bite-size pieces
- (scallops can be substituted for any of the seafood)
- 1 lb. small shell noodles
- 1 Tbsp. freshly chopped parsley

Saute onion and green pepper in butter until softened, add mushrooms and cook until liquid is evaporated. Remove from heat, add salt and pepper.

Add flour to pan, stir to combine, gradually add milk. Return pan to heat and cook for 3 minutes. Stir in cheese, mustard, lemon and Worcestershire until cheese is melted. Add seafood and pour over hot cooked noodles. stir to combine. Add fresh parsley before serving.

This dish is up to the cook's interpretation. I tend to be more heavy handed on the ingredients...just assume each measurement should be very generous. This recipe is often doubled or more, depending on the size of the crowd.
