Prosciutto, Olive, and Goat Cheese Tart
A quick and easy appetizer that looks impressive and tastes great with a glass of wine.
ingredients
- 2 sheets - Puff pastry dough (pre-made)
- 1/3 cup - Goat Cheese
- 1/4 cup - Mediterranean olives chopped
- 1/4 cup - Chopped Prosciutto
- 1 Onion - Sweet yellow or white - sliced thin
- 2-3 tsp.- Olive Oil
- 2-3 tsp. - Chopped fresh rosemary
- Salt and pepper to taste

Pre-heat oven to 400 degrees

Roll out puff pastry dough to 1/2 inch thickness. Cut into squares, 2 inches. Saute onions in pan with olive oil, slowly cook at medium temperature for approximately 15 minutes, or until caramelized. Chop prosciutto. Place small dollop (approximately one teaspoon) of goat cheese on each square of pastry and follow with small amounts of prosciutto, chopped olives, caramelized onion, rosemary, and salt and pepper to taste. Place squares on greased cookie sheet and cook for 15 minutes or until pastry becomes flaky and golden brown.
